The subject of the last chapter of Summer Cooking (1955) is devoted to picnics. Her recipes include:


• Smoked cod roe sandwiches in
    brown bread

  1. Smoked trout or smoked mackerel sandwiches

• Bacon and lettuce sandwich

• Pan bagna

• Shooter’s sandwich

• Prawns with watercress dressing

• Cold spiced salt beef

• Figs and cream cheese

Elizabeth David died 20 years ago, on May 22 1992. To celebrate her life, the first Elizabeth David Picnic Day was held on the following Sunday.


Everyone was encouraged to dip into her recipes and spread out their picnic cloths with friends and family in their gardens, in parks, fields and the seaside.

The picnics are now celebrated on the third Sunday in May
